Hardfish and saltfish are, in the opinion of the Icelanders, a complete delicacy. The methods of drying and salting fish have followed Icelanders for centuries.
Today’s methods may not be exactly the same as they used to be in the old days, but they have evolved with increased technological sophistication in the Icelandic fishing industry.
Many still work the hardfish as was done in the old days by hanging it in special shacks similar to those on the top photo.
